- Ngam Ngov (ងាំង៉ូវ) is a salt-cured lime: whole limes salted and matured for months. It has a strong connection to Cambodian food culture and works well beyond it.
- NIRORN pairs traditional salt curing with modern, controlled production, clean packaging, and clear labeling.

## What Ngam Ngov is not
- Not preserved lemon (Moroccan *l'hamd markad*): savory and sharp rather than floral, with an almost umami depth, and no added sugar.
- Not calamansi, not kaffir/makrut lime leaf, and not dried lime (Persian *loomi*), which is dehydrated rather than salt-cured and tastes sour-dusty rather than saline.
- Not a sauce, a paste or a condiment: it is whole fruit, used as an ingredient in the way salt and acid are.
- Not fermented in the lactic sense and not pickled in vinegar. Salt and time only.

## Provenance
- Limes are bought from named growers and cured whole, by the batch, in Kampot, Cambodia.
- Every jar carries a code that resolves to the batch it came from: when it was salted, how it was cured, and when it was released.
- A batch is an append-only record. Nothing in it is edited after the fact; a correction is a new entry that names the one it voids.
