Ngam Ngov Mint Soda
Tradition in the jar. A new experience in the glass.
The mojito with the rum left out, which costs it less than you would think: the Ngam Ngov syrup was doing the work in that glass, and it is still doing it here.
More soda water goes in to fill the room the rum leaves — 150 to 180 ml rather than 110 — so the drink stays long and cold. The preserved lime and the mint come through at the same strength.
This is the one to pour at lunch, and for anyone who wants to taste what the cure does with nothing else in front of it.

Ingredients
For one 16 oz glass
- 30 mlNgam Ngov syrup
- 10 mlfresh lime juice
- 8–10fresh mint leaves
- 150–180 mlsoda water
- to fillcrushed ice
The syrup is already sweetened, so nothing else has to be. Taste before reaching for the soda — a shorter pour makes it a stronger drink, not a sweeter one.
Method
- 1
Add the mint leaves, Ngam Ngov syrup and fresh lime juice straight into the glass.
- 2
Press the mint gently, two or three times, only enough to release its scent.
- 3
Fill the glass with crushed ice and top with 150–180 ml of soda water.
- 4
Stir from the bottom of the glass so the syrup is carried through the whole drink, and add a little more ice if it needs it.
