Ngam Ngov · Salt-Cured Lime

An old ingredient.A new culinary language.

Ngam Ngov is a salt-cured lime with remarkable depth, acidity, salinity, and aroma. NIRORN prepares it for chefs, kitchens, and new ideas.

The ingredient

Meet Ngam Ngov

The process

Lime. Salt. Time.

The process is simple. Executing it consistently is not. NIRORN combines traditional preservation with disciplined production and modern presentation.

  1. 01

    Selection

Whole limes are chosen for size, ripeness, and skin condition.

  2. 02

    Washing

Fruit is cleaned and prepared under controlled, food-safe handling.

  3. 03

    Salting

Limes are salted — the step that begins the transformation.

  4. 04

    Curing

Time does the work: acidity mellows, salinity settles, aroma deepens.

  5. 05

    Inspection

Every batch is checked before it is allowed to move forward.

  6. 06

    Packing

Clean packaging and clear labeling, batch by batch.

Live from the curing house

Not “matured ninety days.”
Today, day 39.

A batch isn’t a number printed on a label. The day it was salted starts a clock, and this page reads it. Right now, batch CMP-0908 is in Slow maturation — the floor and this website read the same record.

Test kitchen

Tested at the table.

Our restaurant is more than a place to serve food. It is where ingredients are tested, recipes are refined, and guests help shape what comes next.

Every dish is an opportunity to understand the ingredient better.

Collaboration

Created with chefs.

We collaborate with cooks, chefs, bartenders, and culinary teams interested in exploring preserved citrus in new ways.

Optional. It is sent with your message.

The only place a reply can go. It is used to answer you and for nothing else.

This decides who reads it — a wholesale question and a menu collaboration are answered by different people.
